Banana Bread...For Dinner!

So I have been wanting a good banana bread recipe for awhile now. Yes, I have fixed them before in the past, but I want a good, stand out recipe that I can use for years to come. So the other day when I noticed Trey had some bananas going bad on the counter, I decided I would make banana bread again. I had been fooling around on pinterest earlier that day so I decided I would go there to find a recipe. Some of them called for sour cream and I knew I had none of that so I settled on a cool looking pin that had fresh baked banana bread in the picture with the family recipe on an index card to give you the recipe. I added some cinnamon, baked it up, and viola...banana bread. Now this isn't THE banana bread I have been trying to find, but it is quite tasty!! The only issue I had was that the sides, bottom, and top got too done while the middle was cooking. I am assuming I can remedy this by dividing the batter next time, but the recipe called for one pan so I used one pan. Here's the recipe...

Banana Bread - adapted from a pin on pinterest...not sure whose
  • 1/4 CUP (1/2 STICK) butter, melted
  • 1/4 CUP vegetable/canola oil
  • 3 ripe bananas -- NOTE -- I guess I should have elaborated here and said three mashed ripe bananas. I spun mine in a mini chopper till it was smooth.
  • 2 eggs
  • 1/2 CUP milk with SPLASH of lemon juice
  • 1 CUP sugar
  • 2 CUPS AP flour
  • 1 TSP baking powder
  • 1 TSP baking soda
  • 1/2 TSP salt
  • 1/2 TSP cinnamon
  • 1 CUP chopped walnuts
Grease one or two 9X5 loaf pans. Preheat the oven to 350 degrees F. Whisk all the wet ingredients together in a large mixing bowl. Whisk together the dry ingredients in a medium mixing bowl. Add the dry to the wet and whisk until combined. Stir in the chopped nuts. Pour batter into prepared pans and bake. About 55-50 minutes for one pan. Not sure for two pans. I would say start at 25-30 minutes and test it. Bake until a toothpick inserted in the middle comes out mostly dry. Moist crumbs are a-okay! Remove from oven and let cool. I dumped mine onto a cutting board to cool without the pan. Keep wrapped at room temperature. ENJOY!


The 'for dinner' part comes in because when I made it, I joked around with Trey that my dinner was in the oven and I didn't know what he was going to eat. He told his dad that he would have to go out and munch on grass like a cow. Don't worry though. We had a nice dinner of mini steaks, potatoes, and peas. I wouldn't really let him eat grass. :)
